One of my favorite things to do is bake. I love to bake. It is slow and divine to me. I feel connected to my food which makes it feel more nourishing to me and my family. When I am in the kitchen I have time to connect with my girls. They “help” me mostly by putting love into the dish rather than actually helping me bake. They are definitely good at licking the bowl and spoons clean after everything gets put into the oven.
Today I want to share one of my most beloved recipes, Apple Doughnuts. This is passed down from my mother, the queen of baking. She’s amazing and so are these muffins. They are called dougnuts, even though they look like muffins, because they taste like homemade cake doughnuts. (These are a fabulous treat if you haven’t ever had them. I’ll search for the recipe…) Every time I make these beauties I have to make a double batch because they go so quickly in my house. Everyone loves them!
Preheat oven to 350 degrees. Yields 10-12 muffins.
1 1/2 cups flour
1 cup sugar (divided)
1 3/4 tsp baking powder
1/2 tsp salt
1/2 tsp nutmeg (freshly grated is best)
1/2 cup shortening
1 egg, beaten
1/4 cup milk
1-1 1/2 cups apples, peeled and grated (I usually grate two nice sized apples and don’t measure)
1/4 cup melted butter
1 tsp cinnamon
Sift together flour, 1/2 cup sugar, baking powder, salt and nutmeg. Cut in shortening. Stir in the egg and milk. (The dough will look rather dry at this point. That’s ok. The apples will juice things up.) Fold in the apples.
Fill muffin tins 3/4 full. Bake at 350 degrees for 25-35 minutes.
Let cool. Mix the remaining 1/2 cup sugar with the cinnamon. Then dip tops of muffins in melted butter and cinnamon and sugar.
